I was wondering which colour stats i should aim for...

Umm... that depends on your skill with the levels.

Platinum = records
Red = top quintile
Orange = 2nd quintile
Yellow = middle quintile
Green = 4th quintile
Blue = lower quintile

Shoot as high as you can.  Some charts are tight enough that you'll struggle to get into red, while others have plenty of potential for a new record and are just waiting for someone to unlock it.
